Malic acid is found in various fruits and vegetables as an organic acid giving a refreshing sour taste. Malic acid is a safe product classified as GRAS (Generally Recognized as Safe) and used around the world in both food and industrial applications.
It is highly valued as an acidulant in the food industry because it is non-volatile, anhydrous, free flowing and non-hygroscopic. Malic Acid is made in both the D- and L- isomers as well as the mixture DL-Malic. The Malic Acid manufactured by our parent company, FUSO, is the DL-version.

APPLICATIONS
Food
Malic Acid is widely used in beverages, both carbonated and non-carbonated. Drinks that use artificial sweeteners often have a bitter taste that Malic Acid will mask.
Malic is also used in jams and jellies as pH control for preservation and to improve gelling.
Perhaps the largest use is in candy where provides a hard candy. In other instances, it is used to replace citric acid because of a milder taste.
Industrial
Malic Acid is used in a variety of industrial applications from deodorant to dyeing in textiles, as rust and scale remover and in detergents.
